Structure of Complex Proanthos\cyanidins by High Field NMR Spectroscopy

Abstract

Pro anthocyanidins constitute an important category of polyphenolic substances found in a variety of plant systems, including cacao, tea, fruits, peanuts and other food plants. Epicatechin has been demonstrated to mediate beneficial effects of flavanol-rich cocoa on vascular function in humans. Determining the absolute configuration of these systmes has been hindered by the near complete lack of x-ray crystal structures for dimeric and trimeric epicatechin/catechin polymers. Proof of the structure of procyanidins is an essential step in developing the mechanistic biochemical understanding of the role of the complex materials in affecting cardiovascular health. PNNL currently has a funded program to apply advanced methods in NMR spectroscopy to proof of procyanidin structures.
